Fruit and Jello

There's apple salad, Waldorf Salad, then there's Mother's Apple Salad! Mother always called this the "Greentown Recipe," because she was from the little Indiana town named Greentown. This recipe was unique to her hometown. It is so-o-o good....

Mother's Apple Salad

Family Recipe - Serves 16

  • 4 large, crisp apples
  • 3/4 c. chopped celery
  • 1 1/2 c. red seedless grapes, halved
  • 1 c. chopped pecans
  • 2 c. miniature marshmallows

Dressing:

  • 1 1/2 c. sugar
  • 6 T. corn starch
  • 3 c. pineapple juice

In a large sauce pan, thoroughly mix he sugar and corn starch. Stir in the pineapple juice. Cook over medium heat until clear and thickened, stirring constantly. Refrigerate until chilled.

In a large mixing bowl, combine peeled and diced apples, celery, grapes, pecans and marshmallows. Stir in chilled sauce. Refrigerate tightly covered.


Although this jello salad requires a little extra prep time, it's worth it! It's a fooler, because most people never guess that the crust is made of pretzels!

Strawberry Jello Salad

Serves 15

Bottom Layer:

  • 1 1/2 c. crushed pretzels
  • 3 T. sugar
  • 1 stick melted butter

Middle Layer:

  • 1 8oz. package Philadelphia Cream Cheese, softened
  • 1 8 oz. Cool Whip
  • 3/4 c. sugar

Top Layer:

  • 1 large box strawberry jello
  • 2 c. hot water
  • 2 10 oz. packages frozen strawberry slices

Bottom layer: Combine pretzels, sugar, and melted butter. Press into bottom of a 9 x 13 pan. Bake at 350 degrees for 10 minutes. Cool.

Middle layer: Mix together cream cheese and sugar. Add Cook Whip. Spread on cooled bottom layer. Chill.

Top Layer: Combine jello with water until jello is dissolved. Add frozen strawberries. Stir. Let set until slightly jelled. Spread jello mixture on chilled middle layer. Refrigerate. Can be made a day ahead.

 


I have several recipes for Broccoli Salad, but this is my favorite!

Broccoli Salad

  • 2 bunches raw broccoli
  • 1 small onion
  • 12 slices bacon (crisp and crumbled)
  • 1 cup white raisins
  • 1 cup sunflower seeds

Dressing:

  • 1 cup Miracle Whip
  • 2 T. vinegar
  • 1/3 cup sugar

Mix ingredients together.  Pour dressing over.  Refrigerate in a sealed container before serving.  Best if chilled overnight.
